That MacLaren's Favorite Summer Snack

This morning I sent out the latest issue of A Seat At The Table (the twice month email…you can sign up at the bottom of this page) and I always include one of my favorite recipes. This one is our family’s favorite summer treat. I’ve been making it for almost 30 years and it was originally from a Pampered Chef Season’s Best booklet way back when. I promise, you will love it!

Fruit Salsa & Cinnamon Chips
This is one of the best Summer snacks. I will not lie, I have been known to consume this morning, noon & night!

INGREDIENTS

  • 2 kiwis, peeled and diced

  • 2 apples (I like Honeycrisp or Gala) - peeled, cored and diced

  • 1 (16 oz carton) of strawberries, diced

  • 2 tablespoons white sugar (more or less to taste)

  • 1 tablespoon brown sugar (more or less to taste)

  • 3 tablespoons fruit preserves, any flavor (I use apple)

  • 10 (10 inch) flour tortillas (or use Stacy's cinnamon chips or cinnamon graham crackers)

  • melted butter or water

Cinnamon sugar:

  • 1 cup white sugar

  • 2 Tablespoons cinnamon

INSTRUCTIONS

  1. In a large bowl, thoroughly mix kiwi, apples, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes. This is best made the same day and not too far ahead of time so your apples don't start browning - but it is good the next day as well.

  2. For the Cinnamon Chips:

    1. Preheat oven to 350 degrees.

    2. Brush one side of each flour tortilla with melted butter or water (if you are trying to cut calories - but the butter is best). Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet.

    3. Bake in the preheated oven 8 to 10 minutes, until crisp. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.
